I was tagged in facebook to fill this out but then I decided it would be great here too! I'm going to save this file and maybe I'll keep working on it as time goes on. Another lady named Sarah filled out 100 things about herself on her blog. Maybe I'll get there someday! I missed Menu Plan monday this week and our dinner times have suffered because of it. I didn't even get our shopping done this week so it has been BAD...I've already started working on next weeks plan so hopefully it will be great then! Until then...here are 25 Things about me...

1. I really should be doing my homework right now…
2. I got into Texas Tech Grad school even though I didn’t finish applying.
3. I paid for my undergrad degree completely with scholarships and grants and graduated at 21.
4. I am an imperfect person loved by a great God even though I ignore him over and over and over…
5. My favorite quote is by Erma Bombeck, “When I stand before God at the end of my life I would hope that I would have not a single bit of talent left and could say, I used everything you gave me.”
6. I have a new found love for my crockpot that I’m starting to think is weird…
7. I became friends with a boy, fell in love with a man, and married a Marine.
8. That Marine was the first person I ever kissed.
9. And then I married that Marine 4 days after our 1 year anniversary of dating.
10. Six years later he is even more amazing than I ever could have imagined back then…
11. I have three adorable dogs that each have very unique personalities…
12. and I love them like they were children.
13. I have Poly-Cystic Ovarian Syndrome which is sometimes called PCOS. Look it up…
14. I have an affinity for pretty cars, expensive purses, diamonds, and fancy cell phones & electronics.

16. I changed my major from Education during college because I was afraid I wouldn’t be good at it.
17. Now here I am in the most rewarding job I’ve ever had…teaching.
18. My deepest fears are that I will disappoint those I love and that I might never be a mother.
19. I want to be healthy. I lost 40 pounds from May to October of 2008. Didn’t gain but didn’t lose during
Thanksgiving and Christmas and now I’m getting back on track.
20. I’m thinking about getting an ’05 or newer White Ford Mustang to go along with my Tahoe after I lose 60 more pounds…to reward myself because I’ve always been too responsible to buy a sports car.
21. I really love working out on elliptical machines and want to own one.
22. I have a blog but am too afraid to tell people the web address so they can read it. What if they don’t like it?
23. I have the BEST parents and brother in the world. They make me a better person.
24. I can watch a commercial about starving children in Africa and be a little sad but show me a commercial from the humane society about starving or abused puppies/kittens and I’m sobbing uncontrollably.

Crock Pot Roast
Crock Pot Roast
Ingredients
1 1/2 - 2 lb Rump Roast
8 medium russett potatos - peeled and halved
1 1/2 cup baby carrots
1/4 cup flour
1 Lipton Onion Soup Packet
salt, pepper, garlic salt
Rinse roast with water and place in the crock pot. Season roast with salt, pepper, and garlic salt. I always tend to underseason so I've been making myself really cover my meats when cooking. Sprinkle roast with the flour making sure it is entirely covered. Then top roast with contents of the Lipton Onion Soup packet. It works best to cook the roast for awhile before adding the carrots and potatos. I started it on the low temperature setting for about 1 1/2 hours then dropped in potatos and carrots on top of the roast. I cooked mine while I was at work so it cooked on low for about 6 1/2 hours then on high for 2 hours after work. I guess my total was about 8 1/2 hours. It really depends on your crock pot. I really need a new one. You know the roast is ready when it can be pulled apart easily with a fork and the carrot and potatos are soft!!! Yum!

Yum!!!
Well not a lot going on around here tonight...Kevin and I are eating some yummy roast, potatos, and carrots that I finally made for dinner and watching some of our DVR'd shows! We are going to watch...
It's actually really nice to relax! Like I said...I finally made the roast and it was the best one I've ever made! I'll post the recipe next even though its just a basic crock pot roast. Who knows...maybe someone somewhere who stumbles upon this will enjoy it.
We've both been busy with school and work. Kevin is doing really well at school. I've missed him while he is gone in the evenings but it has given me a chance to get my school work done.
I'm still praying for Kelly's precious baby Harper. I don't know what it is. I'm just worried sick about her. Maybe because I identify with Kelly's struggles or because Khanni was due the same day. I don't know. I've been reading Kelly's blog for several months...since right after she found out she was pregnant. Harper has been improving greatly in the last few days! Go look at Kelly's blog to read about her!
I'm really trying to get back on track with my weight loss. I've been up and down with the same 5 pounds since the beginning of November. I'm hanging out just under 40 lbs lost and I just can't get back on track. There is always some excuse...beginning of November=Our Anniversary, End of November=Thanksgiving, December=Month long Christmas parties and get togethers, January=My birthday...
I've got to get things together. I want to be healthy for me, for Kevin, and for any future children we may have someday. I did MUCH better when blogging. I think it kept me accountable. So here goes nothing...

Menu Plan Monday
Monday-Leftovers! We are still finishing the Taco soup and my brother brought some brisket over from a great restaurant in Bronte so... Taco soup and brisket sandwiches! I know! A weird combination!
Tuesday-Subway for Kevin and I! Kevin's first night of class! We've got to figure out how he is going to eat before class!
Wednesday-Roast, Carrots, & Potatos (Didn't get to it last week! I ended up having to go to the doctor :( so we ate dinner in town while waiting to pick up my prescription.)
Thursday-Soup and Sandwiches
Friday-Porkchops (Does anyone know any good porkchop recipes?)
This week is a BIG week for Kevin and I so our menu plan is be kind of strange. Tomorrow Kevin has his first day as a college student! Kevin will be attending Howard College at night after he gets off work so dinner will really just be me and the dogs. He is taking 12 hours and will be going on Monday, Tuesday, and Thursday. I'm so proud of him! School was not something Kevin even wanted to think about after he got out of the Marines but I just didn't want him to regret in 10 years. He has the GI Bill to pay for school so it would be wasted money if he didn't go! I've mentioned him starting about once a semester for that last several years but this year he decided to go! He has just enough time left on his GI bill to finish a bachelors degree. I know he is going to do so well!
I also took the plunge and am starting school this semester at Texas Tech for my masters degree! I started to apply but chickened out and never finished my application but amazingly...I got in anyway! I figured that this must be God telling me it was time to get started so here goes nothing! My program is completely online so that makes it easier on our schedule. I'm only taking one class since I got accepted too late to apply for financial aid but I'm applying this month so hopefully I'll get a scholarship for this summer and on! Like I said...a busy time for both of us but an exciting time also. I'm sad about the time I'll have to be away from Kevin when he is in class but I know this is best for us in the long run!

Happy Birthday Liam Alexander Silva!
My cousin Khanni and her husband Jeremy welcomed a beautiful baby boy early this morning! Liam Alexander Silva was born at 1:05 am. He weighed 6 lbs 13 oz and was 21 inches long. Khanni spent just about 30 hours in labor so needless to say...Mommy, Daddy, Liam, and Grandma (Sheila) are very happy and very tired.

Pray for Harper!
I have been following the blog of a wonderful Christian woman named Kelly from Arkansas. She suffered with infertility for years until she amazingly conceived her first child. She was induced Friday morning and shortly after giving birth her new daughter, Harper, was flown to a NICU in Tulsa with pneumonia and a dismal outlook. Please pray for healing for Harper and strength for Kelly and her family!

Menu Plan Monday-A day late!
I've been making a pointed effort to cook more for health and budget purposes. I've seen lots of people set out their menu plans on their blogs so I'm hoping posting with help me plan ahead and cook more. Kevin and I are always on the go so dinner is all I'm going to plan. Yes I'm a terrible blogger...
Okay Okay...I know. I'm terrible at this. I just have a hard time editing my thoughts to keep this short and I don't have all the time in the world to write down all I want to say! Its a new year and time for a new start. I'm going to just try to post a little even if I don't say all I want to. It keeps me accountable. As soon as I stopped blogging my weight loss slowed more and more. Time to get back to work. I've updated a list of really cool blogs I've found on the internet. I hope to someday be as great as these ladies. I've also in the process of cooking a recipe I found on one of the blogs tonight...I'll post as soon as I see how it turns out!!!
